Delight in the exquisite flavors of this traditional Filipino delicacy - Pancit Molo. A warm and comforting soup featuring handmade pork dumplings, simmered in a savory broth and garnished to perfection with chicken, scallions, and shallots.

Ingredients

15 medium shrimp, peeled and deveined
1 12 pounds ground pork
1 medium yellow onion, minced
12 teaspoon sesame oil
1 egg
12 teaspoon salt
14 teaspoon ground black pepper
1 teaspoon garlic powder
14 cup sliced scallions
30 to 35 wonton wrappers
6 cups chicken broth
1 cup strips of boiled chicken meat
2 tablespoons fish sauce
14 cup chopped scallions
14 cup sliced shallots, for garnishing

Instructions

  • For the wontons and wonton assembly

    1. Prepare the filling by coarsely chopping the shrimp and mixing it with ground pork, minced onion, sesame oil, egg, salt, pepper, garlic powder, and sliced scallions until well combined.
    2. Place a wonton wrapper on a flat surface. Spoon 1 tablespoon of the filling into the center of the wrapper.
    3. Moisten the edges with water, fold the wrapper into a triangle, and press to seal. Fold the two opposite sides to the middle, creating a filled dumpling. Repeat until all the filling is used.
  • For the soup

    1. In a soup pot, bring the chicken broth to a boil.
    2. Carefully add the dumplings, ensuring they are spaced to prevent sticking. Simmer for a few minutes.
    3. Stir in the boiled chicken meat and season the soup with fish sauce.
    4. Transfer the soup to a serving bowl and garnish with chopped scallions and sliced shallots.
