Delight in this special dish of flavorsome ground pork, subtly sweet fruits, and aromatic seasonings, all encased in a flaky, golden pastry crust. A traditional favorite with a touch of elegance, perfect for any gathering or special occasion.

Ingredients

For the tourtiere filling

2 lbs ground pork
1 cup water
2 chopped onions
2 minced garlic cloves
1 12 cups fresh apples, grated
14 cup raisins, finely chopped
14 cup dried apricots, finely chopped
2 cups fresh breadcrumbs
2 teaspoons dried sage
1 teaspoon salt
1 teaspoon mace
1 teaspoon dried thyme
12 teaspoon dry mustard
12 teaspoon allspice
12 teaspoon nutmeg
12 teaspoon pepper
2 pastry dough for double crust pie (or tea biscuit dough top & bottom for 2 - 9-inch pans)

Instructions

  • For the filling

    1. Combine the ground pork, water, chopped onion, minced garlic, grated apple, chopped raisins, chopped apricots, dried sage, salt, mace, dried thyme, dry mustard, allspice, nutmeg, and pepper in a pan.
    2. Bring the mixture to a boil, then simmer uncovered until the liquid has evaporated (approximately 45 minutes). Stir frequently.
    3. Remove the pan from the heat, stir in the fresh breadcrumbs, and allow the filling to cool to room temperature.
    1. When the filling has cooled, pour it into two unbaked pie shells, cover with the top crust, and brush the pastry with milk. Place the pies in a preheated 400°F (200°C) oven for 10 minutes.
    2. Reduce the oven temperature to 350°F (175°C) and bake for an additional 25-35 minutes until the crust is golden brown.
    3. These pies can also be frozen for later enjoyment.
