Exquisite Pork Tourtiere

2 | chopped onions |
2 | minced garlic cloves |
1 1⁄2 | cups fresh apples, grated |
1⁄4 | cup raisins, finely chopped |
1⁄4 | cup dried apricots, finely chopped |
2 | cups fresh breadcrumbs |
2 | teaspoons dried sage |
1 | teaspoon salt |
1 | teaspoon mace |
1 | teaspoon dried thyme |
1⁄2 | teaspoon dry mustard |
1⁄2 | teaspoon allspice |
1⁄2 | teaspoon nutmeg |
1⁄2 | teaspoon pepper |
2 | pastry dough for double crust pie (or tea biscuit dough top & bottom for 2 - 9-inch pans) |
Instructions
For the filling | |

1. | Combine the ground pork, water, chopped onion, minced garlic, grated apple, chopped raisins, chopped apricots, dried sage, salt, mace, dried thyme, dry mustard, allspice, nutmeg, and pepper in a pan. |
2. | Bring the mixture to a boil, then simmer uncovered until the liquid has evaporated (approximately 45 minutes). Stir frequently. |
3. | Remove the pan from the heat, stir in the fresh breadcrumbs, and allow the filling to cool to room temperature. |
1. | When the filling has cooled, pour it into two unbaked pie shells, cover with the top crust, and brush the pastry with milk. Place the pies in a preheated 400°F (200°C) oven for 10 minutes. |
2. | Reduce the oven temperature to 350°F (175°C) and bake for an additional 25-35 minutes until the crust is golden brown. |
3. | These pies can also be frozen for later enjoyment. |
