Exquisite Pumpkin Flan with Brown Sugar Crust

1 | cup pumpkin puree |
⅔ | cup granulated sugar |
1 | dash salt |
2 | teaspoons cinnamon |
¼ | teaspoon nutmeg |
2 | milk |
1 | cup heavy cream |
1 ½ | teaspoons vanilla |
Instructions

For baking the flan
- Preheat the oven to 350 degrees.
- Evenly sprinkle half of the brown sugar on the bottom of 8 half-cup ramekins or individual flan dishes.
- Using a mixer, beat the eggs. Add the pumpkin puree, granulated sugar, salt, nutmeg, and cinnamon.
- Stir in the milk, heavy cream, and vanilla.
- Carefully pour the mixture into the prepared baking dishes.
- Create a water bath by placing the baking dishes in a large baking pan filled with water, reaching halfway up the sides of the flan dishes.
- Bake for 1 hour then remove from the oven.
- Take the flans out of the water bath and let them cool for at least 15 minutes.
- At this stage, the flans can be refrigerated for later use.
- When ready to serve, preheat the oven to broil. Sprinkle the remaining brown sugar on top of the flans.
- Place them under the broiler for a couple of minutes or until the sugar is nicely browned.
