Exquisite Pumpkin Flan with Brown Sugar Crust

Instructions
For baking the flan | |

1. | Preheat the oven to 350 degrees. |
2. | Evenly sprinkle half of the brown sugar on the bottom of 8 half-cup ramekins or individual flan dishes. |
3. | Using a mixer, beat the eggs. Add the pumpkin puree, granulated sugar, salt, nutmeg, and cinnamon. |
4. | Stir in the milk, heavy cream, and vanilla. |
5. | Carefully pour the mixture into the prepared baking dishes. |
6. | Create a water bath by placing the baking dishes in a large baking pan filled with water, reaching halfway up the sides of the flan dishes. |
7. | Bake for 1 hour then remove from the oven. |
8. | Take the flans out of the water bath and let them cool for at least 15 minutes. |
9. | At this stage, the flans can be refrigerated for later use. |
10. | When ready to serve, preheat the oven to broil. Sprinkle the remaining brown sugar on top of the flans. |
11. | Place them under the broiler for a couple of minutes or until the sugar is nicely browned. |
