⅔ | cup vidalia onion, chopped |
⅔ | cup red bell pepper, chopped |

Instructions
1. | Prepare the eggplant by stabbing it and roasting it in a medium-hot oven, along with garlic heads brushed with olive oil. Turn occasionally until the eggplant collapses and the garlic is soft. |
