- Peel and section the red grapefruits over a bowl, ensuring to reserve the juice.
- Chop the grapefruit sections and set them aside to drain.
- In a separate bowl, combine the dried apricots with water and let them stand for 2 hours.
- After 2 hours, drain and chop the apricots.
- In a mixing bowl, combine the shredded Monterey Jack cheese, Neufchatel cheese spread with pineapple, and softened cream cheese. Mix until smooth.
