1 pound potatoes (Russets or red-skinned), skinned and cubed
1 15 ½ oz. can wild red salmon
1 large egg, beaten
1 cup mayonnaise
1 cup chopped purple onion
1 cup chopped Italian parsley
2-3 tablespoons lemon juice
1 teaspoon freshly ground pepper
3 scallions, white and some of the green, chopped
hot pepper sauce, Worchestershire sauce, garlic salt, chopped chives to taste
bread crumbs for coating

Instructions

  • Preparation of Salmon Cakes

    1. Prepare the potatoes by skinning and cubing them. Place in a pan with cold water, bring to a boil, then simmer until fork-tender. Drain and let cool in a bowl before mashing with a fork.
    2. In the same bowl, add the canned salmon and break up any large chunks. Mix in the beaten egg, mayonnaise, onion, parsley, lemon juice, pepper, scallions, and seasonings. Adjust flavors to taste before shaping the mixture into desired cake sizes.
    3. Coat each salmon cake with breadcrumbs by placing them in a bowl and covering the top and sides. Place the breaded cakes on a sheet pan and refrigerate for at least 20 minutes. When ready, pan fry each cake until golden brown on both sides, approximately 3-4 minutes per side.
    4. Serve the salmon cakes on their own or with a dipping sauce of your choice, such as mayo with lemon juice and capers. These delectable cakes can be enjoyed as bite-sized hors d'oeuvres or as a main course. Delight in every flavorful bite!
