2 tablespoons cornstarch
14 teaspoon baking soda
14 teaspoon baking powder
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons water
1 teaspoon vegetable oil
1 dash sesame oil
1 pound skinless, boneless chicken breast meat - cubed
1 cup chicken broth
1 cup white sugar
2 tablespoons distilled white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
14 cup cornstarch
12 cup water
1 quart olive oil for frying
2 tablespoons toasted sesame seeds

Instructions

    1. Begin by gathering all the necessary ingredients.
    2. Prepare the battered chicken mixture: Sift all-purpose flour, cornstarch, baking soda, and baking powder into a mixing bowl. Add low-sodium soy sauce, dry sherry, water, vegetable oil, and a dash of sesame oil. Stir the mixture until smooth. Coat the cubed chicken breast meat with the batter, then cover and refrigerate for 20 minutes.
    3. While the chicken is marinating, prepare the sauce: In a saucepan, bring chicken broth, white sugar, distilled white vinegar, dark soy sauce, sesame oil, chile paste, and minced garlic to a boil over high heat. Dissolve cornstarch in water and stir it into the boiling sauce. Simmer until the sauce thickens and turns clear, approximately 2 minutes. Reduce the heat to low to keep the sauce warm.
    4. Heat olive oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
    5. Carefully fry the battered chicken pieces in batches until they are golden brown and float to the surface, approximately 3 to 4 minutes each. Drain the fried chicken on a plate lined with paper towels.
    6. To serve, arrange the fried chicken on a serving platter and pour the hot sauce over it. Garnish with toasted sesame seeds.
