2. | Prepare the battered chicken mixture: Sift all-purpose flour, cornstarch, baking soda, and baking powder into a mixing bowl. Add low-sodium soy sauce, dry sherry, water, vegetable oil, and a dash of sesame oil. Stir the mixture until smooth. Coat the cubed chicken breast meat with the batter, then cover and refrigerate for 20 minutes. |
3. | While the chicken is marinating, prepare the sauce: In a saucepan, bring chicken broth, white sugar, distilled white vinegar, dark soy sauce, sesame oil, chile paste, and minced garlic to a boil over high heat.
