Exquisite Shrimp Scampi
Delight in succulent shrimp sauteed in exquisite olive oil, bathed in a magnificent brandy sauce infused with the essence of garlic, shallots, and oregano. Perfect when paired with a fragrant rice pilaf and crisp salad!
Ingredients
½ | cup all-purpose flour, sifted |

¼ | teaspoon salt |
½ | teaspoon freshly ground black pepper |
¼ | teaspoon cayenne pepper |
1 ½ | fresh shrimp, shelled and deveined without tails |
½ | cup olive oil |
4 | garlic, minced |
1 | shallot, chopped |
½ | cup fresh parsley, minced |
½ | teaspoon dried oregano, crushed |
2 | tablespoons white wine |
2 | tablespoons brandy |
Instructions
1. | In a small bowl, combine all-purpose flour, salt, freshly ground black pepper, and cayenne pepper. Mix thoroughly. Dredge shrimp in flour mixture. |

2. | In a large skillet, saute the dredged shrimp in olive oil over high heat for 5 minutes. Toss the shrimp frequently to ensure even cooking. Using a slotted spoon, transfer the shrimp to a serving dish, while retaining the flavorful oil in the pan. |
3. | In the same pan, saute minced garlic, chopped shallot, minced parsley, and crushed oregano over medium heat for 3 minutes, while stirring constantly. Spoon this aromatic mixture over the shrimp. Return the pan to the heat source and preheat your broiler to medium heat. |
4. | Carefully pour the white wine and brandy into the skillet, then ignite the alcohol with a match or lighter. Once the flames subside, gently stir to release any caramelized bits at the bottom of the skillet; proceed to pour this flavorful essence over the shrimp. |
5. | Position the serving dish of shrimp in a preheated broiler for approximately 2 minutes, allowing the flavors to meld and the shrimp to attain a delightful finish. |
