1 12 tablespoons olive oil
14 teaspoon crushed red pepper flakes (to taste)
14 cup bottled clam juice
2 tablespoons fresh lime juice
12 ounces medium shrimp, peeled and deveined
1 small savoy cabbage (4 cups) or 1 small iceberg lettuce, shredded (4 cups)
1 large carrot, peeled and grated (1 cup)
4 ounces bean sprouts
3 tablespoons dry-roasted unsalted peanuts
3 tablespoons sweetened flaked coconut
1 scallion, including top, thinly sliced

Instructions

  • Exquisite Thai Shrimp Salad Preparation

    1. Preheat a large saucepan and bring water to a rolling boil.
    2. In a separate small saucepan, gently heat olive oil over low heat. Add crushed red pepper flakes and cook, stirring occasionally for approximately 3 minutes. Remove from heat, strain the oil into a bowl, discard pepper flakes, and whisk in clam juice and fresh lime juice. Set this flavorful dressing mixture aside.
    3. Once the water is boiling, carefully add the peeled and deveined shrimp and reduce the heat to medium-low. Allow the shrimp to simmer for about 2 minutes or until they turn opaque. Drain the shrimp and rinse under cold water to halt the cooking process. Ensure they are well drained.
    4. In a large mixing bowl, combine the cooked shrimp with shredded cabbage or lettuce, grated carrot, bean sprouts, peanuts, coconut, and sliced scallions. Pour the prepared dressing over the salad and toss gently to ensure everything is evenly coated.
