1 | lb ground lamb |
1 | onion, finely chopped |
3 | cloves garlic, chopped |
1 | cup raisins, soaked in hot water |
2 | teaspoons cumin |
1 | teaspoon ground cinnamon |
1 | teaspoon allspice |
1 | egg |
fresh parsley, chopped (for garnish) |
Instructions

For Lamb Kofte
- Soak the dried bulgur wheat in a bowl by covering it with a cup of boiling water and letting it sit for about 10 minutes.
- Uncover the bulgur and allow it to cool for a few minutes.
- In a mixing bowl, combine the ground lamb, finely chopped onion, chopped garlic, soaked raisins, cumin, cinnamon, allspice, and egg.
- Add the cooled bulgur to the mixture and use your hands to thoroughly combine all ingredients.
- Shape the mixture into balls of golf ball size, then gently flatten them.
- Either bake the lamb kofte in a preheated oven for around 10 minutes or fry them in hot oil until they are browned on all sides.
- Serve the lamb kofte garnished with chopped fresh parsley.
