Ingredients

For Lamb Kofte

1 cup dried Bulgar wheat
1 lb ground lamb
1 onion, finely chopped
3 cloves garlic, chopped
1 cup raisins, soaked in hot water
2 teaspoons cumin
1 teaspoon ground cinnamon
1 teaspoon allspice
1 egg
fresh parsley, chopped (for garnish)

Instructions

  • For Lamb Kofte

    1. Soak the dried bulgur wheat in a bowl by covering it with a cup of boiling water and letting it sit for about 10 minutes.
    2. Uncover the bulgur and allow it to cool for a few minutes.
    3. In a mixing bowl, combine the ground lamb, finely chopped onion, chopped garlic, soaked raisins, cumin, cinnamon, allspice, and egg.
    4. Add the cooled bulgur to the mixture and use your hands to thoroughly combine all ingredients.
    5. Shape the mixture into balls of golf ball size, then gently flatten them.
    6. Either bake the lamb kofte in a preheated oven for around 10 minutes or fry them in hot oil until they are browned on all sides.
    7. Serve the lamb kofte garnished with chopped fresh parsley.
