Ingredients

1 ½ lean boneless pork loin
2 water
1 tablespoon soy sauce
1 slice ginger
2 star anise
3 tablespoons miso
3 tablespoons sriracha hot chili sauce
2 tablespoons dry sherry
1 tablespoon rice wine vinegar
1 teaspoon sugar
3 tablespoons sesame oil
4 cloves garlic, minced
1 tablespoon ginger, minced
12 teaspoon red pepper flakes
1 large onion, cut into slivers
1 cup sliced red bell pepper
1 hot steamed rice

Instructions

    1. In a large saucepan, place the lean boneless pork loin, water, soy sauce, slice of ginger, and star anise. Cook, uncovered, over medium heat for 1 hour.
    2. Remove the pork from the liquid and allow it to cool thoroughly. Then, slice it into thin medallions.
    3. Combine miso, sriracha hot chili sauce, dry sherry, rice wine vinegar, and sugar in a bowl. Set aside.
    4. In a wok, stir-fry the minced garlic, minced ginger, and red pepper flakes with sesame oil over high heat for a few seconds. Then, add the slivers of onion and pork slices, and cook for about 1 minute.
    5. Add the sliced red bell pepper and cook for a few more minutes until the peppers are crisp-tender.
    6. Pour in the reserved miso sauce mixture and cook until heated through.
    7. Serve the Exquisite Twice-Cooked Pork with hot steamed rice.
