Exquisite Vanilla Panna Cotta with Clementine Amaretto Gelee

A delightful dessert featuring layers of creamy vanilla panna cotta atop a refreshing clementine amaretto gelee, perfect for any special occasion.
Ingredients
1 | cup freshly squeezed, strained clementine juice (I used 7 clementines) |

¾ | teaspoon powdered gelatin |
2 | tablespoons sugar (optional, if clementines aren't sweet) |
1 | cup half and half cream |
¾ | teaspoon powdered gelatin |
2 | tablespoons sugar |
1 | teaspoon vanilla bean paste or extract |
candied orange peel for garnish, optional |
Instructions
1. | Preparing the Clementine Gelee Layer |

2. | In a small saucepan, place 1/4 cup of freshly squeezed and strained clementine juice. Sprinkle powdered gelatin over the juice and let it stand for 5 minutes. Heat the mixture over medium-low heat, stirring continuously until the gelatin is fully dissolved. |
3. | Add the remaining clementine juice and the Amaretto, stirring well to combine. Divide the mixture evenly among 4 small ramekins, using 1/4 cup of the mixture in each. Refrigerate the ramekins for at least 2 hours until the gelee is set. |
4. | Preparing the Vanilla Panna Cotta Layer |
5. | In a small saucepan, combine 1/4 cup of half and half cream with powdered gelatin. Allow it to sit for 5 minutes, then heat the mixture over medium-low heat, stirring until the gelatin is completely dissolved. Add sugar and the remaining cream, stirring until the sugar is dissolved. Mix in the vanilla bean paste or extract. |
6. | Allow the mixture to cool to room temperature. Carefully pour it over the set clementine layer, using the back of a spoon to maintain the distinct layers. Refrigerate the dessert overnight. Before serving, garnish with candied orange peel, if desired. |
