Ingredients: 9

A delightful dessert featuring layers of creamy vanilla panna cotta atop a refreshing clementine amaretto gelee, perfect for any special occasion.

Ingredients

1 cup freshly squeezed, strained clementine juice (I used 7 clementines)
1-2 tablespoons Amaretto
¾ teaspoon powdered gelatin
2 tablespoons sugar (optional, if clementines aren't sweet)
1 cup half and half cream
¾ teaspoon powdered gelatin
2 tablespoons sugar
1 teaspoon vanilla bean paste or extract
candied orange peel for garnish, optional

Instructions

    1. Preparing the Clementine Gelee Layer
    2. In a small saucepan, place 1/4 cup of freshly squeezed and strained clementine juice. Sprinkle powdered gelatin over the juice and let it stand for 5 minutes. Heat the mixture over medium-low heat, stirring continuously until the gelatin is fully dissolved.
    3. Add the remaining clementine juice and the Amaretto, stirring well to combine. Divide the mixture evenly among 4 small ramekins, using 1/4 cup of the mixture in each. Refrigerate the ramekins for at least 2 hours until the gelee is set.
    4. Preparing the Vanilla Panna Cotta Layer
    5. In a small saucepan, combine 1/4 cup of half and half cream with powdered gelatin. Allow it to sit for 5 minutes, then heat the mixture over medium-low heat, stirring until the gelatin is completely dissolved. Add sugar and the remaining cream, stirring until the sugar is dissolved. Mix in the vanilla bean paste or extract.
    6. Allow the mixture to cool to room temperature. Carefully pour it over the set clementine layer, using the back of a spoon to maintain the distinct layers. Refrigerate the dessert overnight. Before serving, garnish with candied orange peel, if desired.
