1. | Preheat the oven to 375°F (180°C). Prepare a 24-cup mini muffin pan (or 2 12-cup mini muffin pans) by spraying with nonstick cooking spray. |
2. | On a lightly floured surface, roll out the cold, thawed puff pastry sheet into a rectangle using a rolling pin. Cut into 24 (approximately 2 1/2-inch) squares using a pizza cutter. Gently press the puff pastry squares into each cup of the prepared mini muffin pan and prick with the tines of a fork. |
3. | In a bowl, combine mayonnaise, feta cheese, Parmesan cheese, spinach, garlic, and pepper. |
4. | Evenly spoon the feta-spinach mixture into the cups, ensuring not to overflow. |
5. | Bake in the preheated oven until the pastry is puffed and the corners are golden brown, about 15 to 16 minutes. |
6. | Allow the bites to cool in the pan on a wire rack for 5 minutes before transferring to a serving dish. |
