6 | whole wheat tortillas |
1 1⁄4 | cups grated cheddar cheese |
Instructions

- In a large skillet, sauté the bell peppers, zucchini, yellow squash, red onions, mushrooms, and carrots in olive oil until just softened, approximately 7 minutes over medium heat. Remove the vegetables from the pan.
- Using the same skillet, coat it with cooking spray and place one tortilla. Sprinkle a layer of cheddar cheese, followed by a generous portion of the sautéed veggies, then another layer of cheese. Top with another tortilla. Cook until golden brown on each side, approximately 2-3 minutes per side, ensuring the cheese is melted.
- Remove the quesadilla from the skillet and repeat the process with the remaining tortillas.
