Flavorful Garden Vegetable Quesadillas

6 | whole wheat tortillas |
1 1⁄4 | cups grated cheddar cheese |
Instructions
1. | In a large skillet, sauté the bell peppers, zucchini, yellow squash, red onions, mushrooms, and carrots in olive oil until just softened, approximately 7 minutes over medium heat. Remove the vegetables from the pan. |
