Instructions

- Prepare the Galette dough following the crust recipe from Food52, substituting Parmesan with Gruyere.
- Preheat the oven to 425°F (220°C).
- In a saucepan over low heat, melt the butter and add the sliced onions. Stir in the olive oil until the onions are well-coated. Let the onions cook for about 30-40 minutes, stirring occasionally. Season with dried thyme, salt, and pepper.
- Roll out the galette dough using a rolling pin until thin.
- Evenly spread 3/4 cup of grated gruyere cheese on the dough, leaving a 1-inch border.
- Arrange the caramelized onions over the cheese and sprinkle with chopped bacon.
- Fold in the edges of the dough to create a rustic crust, then brush with the egg wash.
- Bake for 25-30 minutes or until the crust is beautifully golden brown.
- Serve the galette with fresh arugula, additional gruyere, and freshly cracked pepper to taste.
