Ingredients

1 Galette Crust
1 tablespoon unsalted butter
2 tablespoons olive oil
2 yellow onions, thinly sliced
2 teaspoons dried thyme
1 pinch salt and pepper
2 bacon, baked at 425°F (220°C) for 8 minutes
1 cup gruyere, grated
1 egg, beaten with water for egg wash
fresh arugula

Instructions

    1. Prepare the Galette dough following the crust recipe from Food52, substituting Parmesan with Gruyere.
    2. Preheat the oven to 425°F (220°C).
    3. In a saucepan over low heat, melt the butter and add the sliced onions. Stir in the olive oil until the onions are well-coated. Let the onions cook for about 30-40 minutes, stirring occasionally. Season with dried thyme, salt, and pepper.
    4. Roll out the galette dough using a rolling pin until thin.
    5. Evenly spread 3/4 cup of grated gruyere cheese on the dough, leaving a 1-inch border.
    6. Arrange the caramelized onions over the cheese and sprinkle with chopped bacon.
    7. Fold in the edges of the dough to create a rustic crust, then brush with the egg wash.
    8. Bake for 25-30 minutes or until the crust is beautifully golden brown.
    9. Serve the galette with fresh arugula, additional gruyere, and freshly cracked pepper to taste.
