1 | egg, beaten with water for egg wash |

Instructions
1. | Prepare the Galette dough following the crust recipe from Food52, substituting Parmesan with Gruyere. |

2. | Preheat the oven to 425°F (220°C). |
3. | In a saucepan over low heat, melt the butter and add the sliced onions. Stir in the olive oil until the onions are well-coated. Let the onions cook for about 30-40 minutes, stirring occasionally. Season with dried thyme, salt, and pepper. |
4. | Roll out the galette dough using a rolling pin until thin. |
5. | Evenly spread 3/4 cup of grated gruyere cheese on the dough, leaving a 1-inch border. |
6. | Arrange the caramelized onions over the cheese and sprinkle with chopped bacon. |
7. | Fold in the edges of the dough to create a rustic crust, then brush with the egg wash. |
8. | Bake for 25-30 minutes or until the crust is beautifully golden brown. |
