Ingredients

For the crostini

1 sliced and brushed with olive oil
1 pound shelled and skinned fava beans
1 cup extra virgin olive oil
3 ounces grated pecorino, plus more for shaving on top of the crostini
1 teaspoon salt, plus more for sprinkling
1 cup mint leaves
juice of ½ lemon
freshly ground pepper

Instructions

For the crostini

1. Prepare the fresh fava beans by shelling them. Blanch the shelled favas in boiling water for 2-3 minutes, then transfer to an ice bath to cool rapidly. Remove the skin and retrieve the inner beans.
2. Preheat the oven to 450°F (230°C). Place the olive oil-brushed baguette slices on a baking sheet.
3. In a food processor, combine the shelled, blanched, and peeled fava beans with extra virgin olive oil, grated pecorino, salt, mint leaves, lemon juice, and freshly ground pepper. Puree until chunky yet smooth.
4. Toast the baguette slices in the oven until golden brown. Top each slice with a dollop of fava bean puree, sprinkle with salt if desired, drizzle with olive oil, and garnish with shaved pecorino. Serve and enjoy!
