12 ounces gemelli pasta
1 Swiss chard
6 slices thick-cut bacon, diced
½ medium onion, halved and sliced
1 clove garlic, minced, or more to taste
2 tablespoons extra-virgin olive oil
¼ cup shredded Parmesan cheese, or to taste

Instructions

    1. Begin by bringing a large pot of lightly salted water to a vigorous boil. Add the gemelli pasta and cook until perfectly al dente, about 8 to 10 minutes. Drain the pasta and keep it warm for later.
    2. While the gemelli pasta is cooking, prepare the Swiss chard by removing and slicing the stems. Cut the leaves in half lengthwise, then thinly slice them.
    3. In a Dutch oven or large skillet over medium-high heat, cook the diced bacon until it turns a tempting light brown, which should take approximately 4 to 5 minutes. Add the sliced onion and minced garlic; sauté for about 2 minutes. Incorporate the chard stems and cook for an additional minute, followed by the leaves until they have wilted, which usually takes about 2 more minutes.
