A delightful dish featuring tender parsnips smashed and roasted to perfection, drizzled with honey and fresh thyme.

Ingredients

1 tablespoon olive oil
4 parsnips, peeled and sliced
4 tablespoons honey
4 teaspoons fresh thyme
½ teaspoon pepper

Instructions

1. Preheat the oven to 450°F.
2. In a large saucepan, bring salted water to a boil over high heat. Add the parsnips and simmer for 15 to 20 minutes until they are tender. Drain and set aside.
3. On a baking sheet, drizzle olive oil and place the parsnips sliced side down. Use a potato masher to gently smash each parsnip. Brush them with the excess oil. Season with salt, pepper, and thyme, then drizzle with honey.
4. Bake for 20 minutes or until the parsnips turn golden brown.
