Gourmet Concord Grape Pie
Indulge in the exquisite flavors of this Concord grape pie topped with a delightful oat streusel.
Ingredients
4 1⁄2 | Concord grapes |
---|---|
1 | cup white sugar |
1⁄4 | cup all-purpose flour |
2 | teaspoons lemon juice |
1⁄8 | teaspoon salt |
1 | (9 inch) pie shell |
1⁄2 | cup quick cooking oats |
1⁄2 | cup packed brown sugar |
1⁄4 | cup all-purpose flour |
1⁄4 | cup butter |
Instructions
1. | Begin by preheating the oven to 425 degrees F (220 degrees C) and positioning a sheet pan on a lower oven rack. |
---|---|
2. | Prepare the grapes by gently squeezing the end opposite the stem to separate the skins from the pulp. Set the skins aside. In a medium saucepan, bring the pulp to a boil and cook, stirring, for 1 minute. Strain through a strainer or food mill to remove the seeds. |
3. | In a mixing bowl, combine the prepared pulp, reserved skins, white sugar, all-purpose flour, lemon juice, and salt. Pour this flavorful mixture into the pastry shell. |
4. | For the oat streusel topping, combine quick cooking oats, packed brown sugar, and all-purpose flour. Cut in the butter until the mixture is crumbly. Sprinkle this delightful topping over the filling. |
5. | To ensure even baking, cover the edges of the pastry with foil. Bake the pie on the prepared sheet pan for 15 minutes. Remove the foil and continue baking for an additional 20 minutes, or until the pie is beautifully golden brown and bubbling. Allow the pie to cool on a wire rack before serving. |
