Instructions
1. | In a mixing bowl, combine Greek yogurt, coarsely grated cucumbers, crushed garlic paste, and fresh lemon juice; set aside. In another bowl, mix lean ground beef, finely diced zucchini, crumbled feta, finely diced red onion, dried marjoram, salt, and fresh ground black pepper. Form the beef mixture into four 3/4-inch-thick patties. Prepare a grill pan or grill rack by coating it with vegetable oil cooking spray. Grill the patties over medium-high heat, flipping once, for about 5 minutes on each side, until the internal temperature reaches 160°F. Divide the drained roasted red peppers evenly among the bottom halves of the sourdough rolls; top each with a burger patty, a dollop of the yogurt sauce, and shredded romaine lettuce and sliced cucumber, if desired. Finish by placing the other half of the roll on top. |
