6 tablespoons sushi-grade tuna, small dice
6 tablespoons galia melon, small dice
6 tablespoons watermelon, small dice
6 sprigs tarragon or mint leaves
1 pinch salt and pepper
1 teaspoon extra virgin olive oil

Instructions

1. In a food processor, combine goat cheese with a pinch of salt and freshly ground pepper until the cheese reaches a soft and creamy consistency. Transfer the mixture into a pastry bag for precision.
2. Prepare the dressing by whisking together grapeseed oil, lime juice, fragrant mint, aromatic tarragon, and crushed pink peppercorns. Toss the dressing separately with the sushi-grade tuna, sweet galia melon, and refreshing watermelon in designated bowls.
3. To assemble the Napoleon, place a ring mold on a flat surface. Begin by layering 1 ounce of diced tuna at the bottom, followed by 1/2 ounce of whipped goat cheese. Continue the layers with 1 ounce of diced galia melon topped with another 1/2 ounce of goat cheese. Complete the final layer with diced watermelon and gently lift the ring mold. Garnish the top with a dollop of goat cheese, a drizzle of high-quality Extra Virgin Olive Oil, and a sprinkle of fresh herbs.
