Instructions
1. | In a food processor, combine goat cheese with a pinch of salt and freshly ground pepper until the cheese reaches a soft and creamy consistency. Transfer the mixture into a pastry bag for precision. |

2. | Prepare the dressing by whisking together grapeseed oil, lime juice, fragrant mint, aromatic tarragon, and crushed pink peppercorns. Toss the dressing separately with the sushi-grade tuna, sweet galia melon, and refreshing watermelon in designated bowls. |
3. | To assemble the Napoleon, place a ring mold on a flat surface. Begin by layering 1 ounce of diced tuna at the bottom, followed by 1/2 ounce of whipped goat cheese. Continue the layers with 1 ounce of diced galia melon topped with another 1/2 ounce of goat cheese. Complete the final layer with diced watermelon and gently lift the ring mold.
