Gourmet Philly Cheesesteak Sliders

Ingredients

1 | pound beef top sirloin steaks |
salt and freshly ground black pepper to taste | |
1 | pinch cayenne pepper, or to taste |
1⁄2 | cup diced onions |
10 | mini sandwich rolls |
2 1⁄2 | freshly shredded provolone cheese |
1⁄2 | cup chopped pickled peppers |
1⁄2 | cup cream cheese, softened |
1 | teaspoon kosher salt |
1⁄4 | teaspoon freshly ground black pepper |
Instructions
1. | In a large skillet, heat olive oil over medium-high heat. Generously season the sirloin steaks with salt, black pepper, and a pinch of cayenne. Sear the steaks in the hot oil for approximately 5 to 6 minutes. Flip the steaks and add the diced onions around them. Continue cooking until the steaks are starting to firm up and are hot with a slight pink center, about 5 to 6 minutes longer. Push the onions under the steaks and cook until they are browned yet still retain some crunch, for an additional 2 to 3 minutes. Transfer the steaks and sautéed onions to a plate. |

2. | Preheat the oven to 425 degrees F (220 degrees C) and line a baking tray with aluminum foil. |
3. | On the prepared baking tray, place the mini rolls. To create space for the filling, hollow out the top of each roll at a 45-degree angle by cutting into it. Remove some of the bread from inside the rolls. |
4. | Thinly slice the steaks, then cut them into 1/2-inch pieces. Place them in a mixing bowl. Add the sautéed onions and any juices from the meat. Mix in 1 1/2 cups of provolone, chopped pickled peppers, softened cream cheese, 1 teaspoon of kosher salt, and 1/4 teaspoon of black pepper; combine everything thoroughly. Taste and add more salt if necessary. Spoon the filling into the rolls and top them off with the remaining 1 cup of provolone cheese. |
5. | Bake in the preheated oven until the cheese has melted and the edges of the rolls begin to brown, for around 15 minutes. |
