Ingredients

1/4 cup olive oil
30 large whole fresh mushrooms, stems removed
1 egg
salt and ground black pepper to taste
1 teaspoon minced garlic
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/4 cup grated Parmesan cheese
1/4 cup shredded Gouda cheese
1/4 cup shredded mozzarella cheese
1/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese

Instructions

1. Begin by preheating the oven to 375 degrees F (190 degrees C).
2. Lightly brush 30 cups in muffin pans with olive oil. Proceed to coat the whole fresh mushrooms, from stem to cap, with olive oil and place them gill-side-up in the prepared muffin cups.
3. Bake the mushrooms in the preheated oven until they are tender, approximately 12 minutes. Meanwhile, in a mixing bowl, whisk together the egg, salt, and minced garlic. Gently fold in the thawed and drained spinach, 1/4 cup of Parmesan cheese, Gouda cheese, mozzarella cheese, and bread crumbs until the mixture is uniformly combined.
4. Once the mushrooms are baked, drain any excess juice. Proceed to generously stuff the mushroom caps with the spinach mixture and return them to the muffin pan. Sprinkle the remaining 1/4 cup of Parmesan cheese over the stuffed mushrooms.
5. Bake in the oven until the filling is heated through and the topping turns a beautiful golden brown, approximately 10 minutes.
