Ingredients
1/4 | cup olive oil |
---|---|
30 | large whole fresh mushrooms, stems removed |
1 | egg |
salt and ground black pepper to taste | |
1 | teaspoon minced garlic |
1 | (10 ounce) package frozen chopped spinach, thawed and drained |
1/4 | cup grated Parmesan cheese |
1/4 | cup shredded Gouda cheese |
1/4 | cup shredded mozzarella cheese |
1/4 | cup dry bread crumbs |
1/4 | cup grated Parmesan cheese |
Instructions
1. | Begin by preheating the oven to 375 degrees F (190 degrees C). |
---|---|
2. | Lightly brush 30 cups in muffin pans with olive oil. Proceed to coat the whole fresh mushrooms, from stem to cap, with olive oil and place them gill-side-up in the prepared muffin cups. |
3. | Bake the mushrooms in the preheated oven until they are tender, approximately 12 minutes. Meanwhile, in a mixing bowl, whisk together the egg, salt, and minced garlic. Gently fold in the thawed and drained spinach, 1/4 cup of Parmesan cheese, Gouda cheese, mozzarella cheese, and bread crumbs until the mixture is uniformly combined. |
4. | Once the mushrooms are baked, drain any excess juice. Proceed to generously stuff the mushroom caps with the spinach mixture and return them to the muffin pan. Sprinkle the remaining 1/4 cup of Parmesan cheese over the stuffed mushrooms. |
5. | Bake in the oven until the filling is heated through and the topping turns a beautiful golden brown, approximately 10 minutes. |
