Gourmet Turkey and Cheese Quesadilla

Indulge in the flavors of a delicious blend of cheeses, smoked turkey, and fresh vegetables inside a crispy whole wheat tortilla.

1 | whole wheat flour tortilla (soft taco size) |

1/4 | cup shredded cheddar cheese |
1/4 | cup shredded monterey jack cheese |
2 | slices deli turkey (I used oscar mayer smoked turkey breast) |
2 | tablespoons Miracle Whip |
1/3 | cup finely shredded iceberg lettuce |
thinly sliced tomatoes |
Instructions

- Begin by heating a skillet. Place a whole wheat flour tortilla in the warm skillet and sprinkle shredded cheddar and monterey jack cheeses over the entire tortilla, leaving a 1/2" border. Allow the cheeses to melt over medium heat.
- Arrange slices of deli turkey in the center of the tortilla, layering them on top of each other.
- Let it cook for a couple more minutes until the turkey is heated through, being cautious not to burn the bottom of the tortilla. The tortilla should become stiff and crispy. Turn off the heat.
- Gently spread Miracle Whip on one side of the tortilla. Place finely shredded iceberg lettuce and thinly sliced tomatoes on top of the Miracle Whip.
- Fold the tortilla in half and press down lightly with a spatula. Transfer the quesadilla from the skillet to a plate, and savor it while it's hot, accompanied by soup or chips.
