A delicious and hearty dish featuring tender pork chops cooked with aromatic onions, garlic, and oregano, in a flavorful green chile and tomato-based sauce.

Ingredients

2 tablespoons vegetable oil
4 pork loin chops
1 medium yellow onion, chopped
4 fresh garlic cloves, minced
1 fresh oregano, chopped
3 (4 ounce) cans (4 ounce) cans diced mild green chilies
1 (14 ounce) can (14 ounce) can diced tomatoes
2 cups water
salt, to taste
pepper, to taste
red chili pepper flakes, to taste

Instructions

    1. Begin by heating vegetable oil in a large saute pan with a lid over medium-high heat until hot.
    2. Add the seasoned pork chops, along with the chopped onions, minced garlic, and fresh oregano, and saute for approximately 5 minutes, or until the onions are translucent and the pork chops are nicely browned.
    3. Next, incorporate the diced mild green chilies, diced tomatoes, and water into the pan, stirring well to combine all the flavors.
    4. Bring the mixture to a gentle boil, then cover the pan with the lid and reduce the heat to a simmer.
    5. Allow the dish to simmer for about 30 minutes, or until the pork chops are tender and fully cooked.
    6. Season with salt, pepper, and red chili pepper flakes to taste before serving.
