Grilled Nectarines with Goat and Gorgonzola Cheeses

Ingredients
½ | cup Cabernet Sauvignon |

1 | cup granulated sugar |
½ | cup goat cheese |
½ | cup crumbled Gorgonzola cheese |
1 | tablespoon milk, or more as needed |
4 | nectarines |
1 | tablespoon olive oil |
Instructions
1. | In a saucepan, combine Cabernet Sauvignon and granulated sugar. Boil until the mixture is reduced to 1/2 cup. Allow the syrup to cool. |

2. | Using a blender, combine goat cheese, crumbled Gorgonzola cheese, and milk. Blend until the mixture is smooth. Add more milk, one tablespoon at a time, if needed. |
3. | Halve the nectarines lengthwise and remove the pits. |
4. | Lightly brush the nectarines with olive oil and grill for 3 to 4 minutes. |
5. | Once cooled, spoon the goat cheese mousse into the center of each nectarine. Drizzle with the prepared Cabernet syrup. |
