Ingredients

½ cup Cabernet Sauvignon
1 cup granulated sugar
½ cup goat cheese
½ cup crumbled Gorgonzola cheese
1 tablespoon milk, or more as needed
4 nectarines
1 tablespoon olive oil

Instructions

    1. In a saucepan, combine Cabernet Sauvignon and granulated sugar. Boil until the mixture is reduced to 1/2 cup. Allow the syrup to cool.
    2. Using a blender, combine goat cheese, crumbled Gorgonzola cheese, and milk. Blend until the mixture is smooth. Add more milk, one tablespoon at a time, if needed.
    3. Halve the nectarines lengthwise and remove the pits.
    4. Lightly brush the nectarines with olive oil and grill for 3 to 4 minutes.
    5. Once cooled, spoon the goat cheese mousse into the center of each nectarine. Drizzle with the prepared Cabernet syrup.
