Grilled Red Snapper with Lemon Chive Sauce

whole red snapper, cleaned and scaled (2 pound)

Instructions

1. Preheat an outdoor grill to medium-high heat and lightly oil the grate.
2. Prepare the red snapper by placing it on a large plate and squeezing the juice of 1 lemon onto each side and inside the cavity. Allow the snapper to marinate for about 10 minutes. In a small bowl, combine soy sauce, butter, and finely minced ginger. In another bowl, mix the remaining lemon juice, chopped tomatoes, chives, sliced red chile pepper, a pinch of white sugar (optional), and salt.
3. Heat a large skillet over medium-high heat until smoking hot. Cook the marinated snapper until it just begins to brown, about 1 minute per side.
4. Place the snapper on the preheated grill and brush each side with the soy mixture. Grill the snapper, basting occasionally with the soy mixture, until it flakes easily with a fork, approximately 4 to 6 minutes per side.
5. Transfer the grilled red snapper to a serving platter and pour the tomato mixture over it before serving.
