In this recipe, Chef John expertly grills fresh swordfish steaks and elegantly elevates them with a homemade spicy white hot sauce, creating a delightful dish perfect for the summer season.

Ingredients

1 habanero chile, seeded and thinly sliced
¼ teaspoon kosher salt
½ cup mayonnaise
1 tablespoon extra-hot prepared horseradish
2 teaspoons lemon juice
1 tablespoon apple cider vinegar, or to taste
¼ teaspoon ground white pepper
teaspoon garlic powder
2 (6 ounce) swordfish steaks
2 teaspoons olive oil
salt to taste
1 tablespoon sliced green onions

Instructions

1. Begin by gathering all the necessary ingredients.
2. Utilize a mortar and pestle to crush the habanero and kosher salt into a fine paste.
3. In a mixing bowl, whisk together the mayonnaise, extra-hot prepared horseradish, lemon juice, apple cider vinegar, ground white pepper, and garlic powder.
4. For a smooth consistency, strain the sauce through a fine mesh strainer to remove the pepper skins and any lingering particles of horseradish. Set the sauce aside for later use.
5. Preheat a charcoal grill until the coals are extremely hot.
6. Coat the swordfish steaks on both sides with olive oil and season them with salt.
7. Place the seasoned swordfish steaks on the preheated grill, flipping them as necessary, until they exhibit a slight springiness to the touch. Remove from the heat.
8. Present the grilled swordfish on a plate as desired and generously top with the homemade white hot sauce. Garnish with sliced green onions.
