Grilled Thai-Style Short Ribs with Spicy Dipping Sauce

2 | stalks of lemongrass, bruised by hitting it with the back of a knife |
2 | tablespoons dark soy sauce |
1 | tablespoon fish sauce |
1 | tablespoon dark brown sugar |
2 | garlic cloves, chopped finely |
1 | tablespoon dried chili flakes |
2 | tablespoons fish sauce |
2 | tablespoons of water |
1 | shallot, sliced thinly |
1 ½ | tablespoons fresh lime juice |
1 | small handfuls of cilantro, chopped |
1 | pinch pinch of sugar |
Instructions
1. | Begin by preparing the marinate. Combine the marinate ingredients in a large bowl, then add the deboned short ribs. Allow the ribs to marinate for 2 to 24 hours. In the meantime, create the spicy dipping sauce by combining the specified ingredients and refrigerate until ready to serve. |

2. | Preheat the oven to 250°F. Line a baking pan with parchment paper. Remove the short ribs from the marinate and place them evenly on the prepared pan. Bake for 30 to 40 minutes or until the internal temperature reaches 160°F. |
3. | For an extra burst of flavor, pan sear the ribs. Heat a heavy-bottomed skillet over medium-high heat until smoking, using some of the oil from the marinated meat. Place the cooked ribs, meaty side down, and sear until well-browned, approximately 2 to 3 minutes per side. Allow the ribs to rest for about 5 minutes before slicing. |
4. | To serve, spoon the spicy dipping sauce over the grilled short ribs and enjoy the dish warm with a side of aromatic balsamic rice. |
