1 | (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®) |
3 | tablespoons real bacon bits |
2 | tablespoons Creole seasoning (such as Tony Chachere's®) |
1 | tablespoon minced garlic |
3 | teaspoons salt |
3 | teaspoons ground black pepper |
1 | teaspoon ground cumin |
1 | teaspoon prepared yellow mustard |
1 | pinch red pepper flakes |
4 | cups water to cover |

1. | Place the dry pinto beans into a large container and cover with several inches of cool water. Allow them to soak for 8 hours or overnight. |
2. | In a large skillet over medium-high heat, cook and stir the ground beef with the vegetable blend and chopped onion until the beef is browned and crumbly, approximately 5 to 7 minutes. Drain and discard any excess grease. |
3. | Combine the beef mixture and soaked pinto beans in a large pot. Add the chicken broth, diced tomatoes with green chiles, bacon bits, Creole seasoning, minced garlic, salt, black pepper, cumin, mustard, and a pinch of red pepper flakes. Pour enough water to cover the ingredients. Simmer until the beans are tender, adding more water if needed, for approximately 3 to 4 hours. |
