2 dry pinto beans
1 12 pounds ground beef
1 (10 ounce) package frozen bell pepper, celery, and onion blend (such as Pictsweet® Farms Seasoning Blend)
1 medium medium onion, chopped
1 (16 ounce) can chicken broth
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
3 tablespoons real bacon bits
2 tablespoons Creole seasoning (such as Tony Chachere's®)
1 tablespoon minced garlic
3 teaspoons salt
3 teaspoons ground black pepper
1 teaspoon ground cumin
1 teaspoon prepared yellow mustard
1 pinch red pepper flakes
4 cups water to cover

Instructions

  • Preparation

    1. Place the dry pinto beans into a large container and cover with several inches of cool water. Allow them to soak for 8 hours or overnight.
    2. In a large skillet over medium-high heat, cook and stir the ground beef with the vegetable blend and chopped onion until the beef is browned and crumbly, approximately 5 to 7 minutes. Drain and discard any excess grease.
    3. Combine the beef mixture and soaked pinto beans in a large pot. Add the chicken broth, diced tomatoes with green chiles, bacon bits, Creole seasoning, minced garlic, salt, black pepper, cumin, mustard, and a pinch of red pepper flakes. Pour enough water to cover the ingredients. Simmer until the beans are tender, adding more water if needed, for approximately 3 to 4 hours.
