Ingredients

For Angel Food Cake

16 ounces angel food cake mix
1 (10 ounce) jar maraschino cherries, drained
water, to add to cherry liquid
12 teaspoon almond extract
12 teaspoon pure vanilla extract

For Cherry Fluff Frosting

14 cup granulated sugar
1 tablespoon reserved cherry juice
1 large egg white
34 cup marshmallow cream (½ of a 7 oz jar)
12 cup chopped maraschino cherries (optional)

Instructions

For Angel Food Cake

1. Preheat the oven to 325°F (165°C) and place a rack in the center.
2. Prepare an ungreased tube pan.
3. In a large mixing bowl, dump the angel food cake mix.
4. Drain the maraschino cherries, reserving 1 tablespoon of cherry juice for the frosting.
5. Mix the remaining cherry juice with water to make 1 1/4 cups of liquid.
6. Combine the cherry-water mixture with almond and vanilla extract in the bowl with the cake mix.
7. Using an electric mixer, beat on low speed for 1 minute, then increase to medium and beat for an additional minute until well blended.
8. Pour the batter into the prepared pan, smoothing the top with a rubber spatula.
9. Bake in the preheated oven until deeply browned and the top springs back when touched, about 38-42 minutes.
10. Invert the pan onto a glass bottle neck to cool for 1 hour, then remove and run a knife around the sides.
11. Invert the cake onto a cooling rack and then onto a serving platter.

For Cherry Fluff Frosting

1. In a medium saucepan, combine the reserved cherry juice, sugar, and egg white.
2. Cook over low heat, beating continuously with an electric mixer on high speed until soft peaks form (2-3 minutes).
3. Remove from heat, add marshmallow cream, and beat on high speed until stiff peaks form, about 2 minutes.
4. Fold in chopped cherries, if using.
5. Spread the frosting over the top and halfway down the sides of the angel food cake. Serve immediately.
6. Note: This cake is best served fresh; leftovers may not retain the same texture and flavor.
