Heirloom Tomato and Cheese Lasagna with Tomato Bliss Orange & Blush

Ingredients
1 | jar Tomato Bliss Orange & Blush Heirloom Tomatoes |

1/4 | red onion, chopped |
2 | cloves of garlic, chopped |
2 | tablespoons extra virgin olive oil |
1 | bay leaf |
1 | teaspoon fresh thyme, chopped |
crushed red pepper, to taste | |
salt & pepper | |
1 | package fresh lasagna noodles, about 1/2 pound |
1 | cup ricotta cheese |
1/2 | cup Parmesan, grated |
6 | mozzarella, grated |
1/4 | cup parsley, roughly chopped |
1/4 | cup basil, roughly chopped |
Instructions
1. | In a pan, heat the olive oil and sauté the red onion and garlic. Once softened, add the Tomato Bliss Orange & Blush Heirloom Tomatoes, bay leaf, thyme, crushed red pepper, salt, and cook slowly for about 20 minutes. |

2. | Combine the ricotta cheese with freshly chopped parsley and basil. |
3. | If making individual lasagnas, cut the fresh lasagna noodles to fit your pan. |
4. | Begin layering the lasagna in the pan by spreading a thin layer of sauce at the bottom. Add a lasagna noodle, more sauce, half of the grated Parmesan and mozzarella. Continue layering with the ricotta and herb mixture, and finish with the remaining sauce, Parmesan, and mozzarella on top. |
5. | Cover the pan with foil and bake in the oven at 350 degrees for 30 minutes. Uncover for the last 5 minutes to allow the top to brown. |
