1 small butternut squash, about 1 pound, peeled and seeded
2 teaspoons chopped mixed fresh herbs
4 teaspoons olive oil
12 teaspoon kosher salt

Instructions

  • For the Herbed Butternut Squash Chips

    1. Preheat the oven to 250 degrees F (120°C) and position a rack in the middle of the oven.
    2. Peel the butternut squash, then separate the thin end without seeds from the bulbous end. Use a spoon to scoop out the seeds and discard them.
    3. Using a mandoline, thinly slice the squash about 1/8-inch thick, creating rounds from the seedless end and rings from the other end.
    4. In a bowl, toss the squash slices with the mixed fresh herbs, olive oil, and kosher salt.
    5. Line 2 baking sheets with parchment paper and arrange the squash slices in a single layer. Bake for 1 hour, then flip the slices. Continue baking for another hour. Turn the slices again, reduce the heat to 200 degrees F (95°C), and bake for an additional hour.
    6. Turn off the oven and allow the chips to cool inside for several hours or overnight. Once cooled, remove from the parchment paper and serve immediately or store in an airtight container for up to a week.
