Ingredients

1 rack of lamb, trimmed (6 ribs)
2 tablespoons chopped fresh parsley
1 tablespoon chopped spring onion
1 clove crushed garlic
1 teaspoon finely chopped rosemary
½ cup fresh breadcrumbs
½ melted butter
salt
freshly ground black pepper
½ butter (extra)

Instructions

    1. In a bowl, combine fresh parsley, spring onions, crushed garlic, finely chopped rosemary, fresh breadcrumbs, and melted butter.
    2. Season the rack of lamb with salt and freshly ground black pepper.
    3. In a pan, melt the extra butter and brown the lamb evenly on all sides.
    4. Cover the lamb with the herb mixture and transfer it to a baking dish.
    5. Bake at 425°F (220°C) for 15-20 minutes until the lamb is cooked to your desired level of doneness.
