Ingredients: 12

This peach cobbler layers juicy spiced peaches under a simple honey-sweetened batter. The topping bakes up golden and tender with a little toasted wheat germ for nutty depth, making it best served warm with ice cream or whipped cream.

Ingredients

5
peach, large, peeled, pitted, and sliced
12
cup honey, warmed and divided
14
teaspoon ground nutmeg
14
teaspoon ground cinnamon
14
teaspoon ground mace
1
egg, extra large
3
tablespoons unsalted butter, melted, plus more for the baking dish
13
cup whole milk
12
cup all-purpose flour
2
teaspoons baking powder
18
teaspoon fine sea salt
14
cup wheat germ, toasted

Instructions

1. Heat the oven to 375°F and butter a 9 x 13-inch baking dish.
2. Toss the peaches with 1/4 cup honey, nutmeg, cinnamon, and mace until evenly coated.
3. Spread the peach mixture in an even layer in the prepared baking dish.
4. Whisk the egg, remaining 1/4 cup honey, melted butter, and milk in a medium bowl until smooth.
5. Whisk the flour, baking powder, salt, and wheat germ in a separate bowl.
6. Stir the dry ingredients into the milk mixture just until a soft batter forms.
7. Spoon the batter over the peaches and spread it gently, leaving a few small gaps for the fruit juices to bubble through.
8. Bake until the peach juices are bubbling and the topping is golden brown, 30 to 35 minutes.
9. Let the cobbler cool for at least 10 minutes before serving warm with whipped cream or ice cream.
