2 cups white sugar
1 cup butter, softened
15 ounces ricotta cheese
2 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
1 ½ cups confectioners sugar
3 tablespoons milk

Instructions

    1. Begin by gathering all the necessary ingredients.
    2. Preheat the oven to 350 degrees F (175 degrees C) and prepare baking sheets by lining them with parchment paper.
    3. In a large bowl, using an electric mixer on low speed, combine the white sugar and softened butter. Increase the speed to high and beat until the mixture is light and fluffy, approximately 5 minutes.
    4. Reduce the mixer speed to medium and add the ricotta cheese, eggs, and vanilla extract.
    5. Switch back to low speed and incorporate the all-purpose flour, baking powder, and salt. Beat until a cohesive dough is formed.
    6. Using a tablespoon, drop dollops of dough onto the prepared baking sheets, ensuring they are spaced 2 inches apart.
    7. Bake in the preheated oven until the cookies turn very lightly golden and have a soft texture, for about 15 minutes. Transfer the cookies to a wire rack to cool completely using a spatula.
    8. Once the cookies have cooled, prepare the glaze by stirring together confectioners' sugar and milk in a small bowl until a smooth consistency is achieved.
    9. Spread the glaze onto the cookies using a small spoon or spatula. Alternatively, dip each cookie into the bowl of glaze. Decorate the cookies as desired.
