Italian-style Broccoli with Tomatoes

A delicious and healthy dish featuring broccoli, oregano, lemon, and tomatoes topped with melted mozzarella cheese.

1⁄2 | teaspoon dried oregano, crushed |
1⁄4 | teaspoon pepper |
1 | tablespoon lemon juice |
2 | medium ripe tomatoes, cut in wedges |
1⁄2 | cup shredded part-skim mozzarella cheese |
Instructions

- Prepare the broccoli by washing and cutting florets into 1/2 inch pieces.
- Place the broccoli and water in a shallow, round microwave-safe dish.
- Cover the dish with plastic wrap or a lid and microwave on HIGH for 5-7 minutes or until the broccoli is tender. Keep an eye on them as microwave cooking times may vary.
- Stir the broccoli several times and then drain any excess liquid.
- Add the dried oregano, pepper, lemon juice, and tomato wedges to the broccoli.
- Sprinkle the shredded part-skim mozzarella cheese on top of the mixture.
- Cover the dish and microwave briefly to melt the cheese.
- Let the dish stand for 2 minutes before serving.
