A delicious and healthy dish featuring broccoli, oregano, lemon, and tomatoes topped with melted mozzarella cheese.

Ingredients

4 broccoli florets
1 tablespoon water
12 teaspoon dried oregano, crushed
14 teaspoon pepper
1 tablespoon lemon juice
2 medium ripe tomatoes, cut in wedges
12 cup shredded part-skim mozzarella cheese

Instructions

    1. Prepare the broccoli by washing and cutting florets into 1/2 inch pieces.
    2. Place the broccoli and water in a shallow, round microwave-safe dish.
    3. Cover the dish with plastic wrap or a lid and microwave on HIGH for 5-7 minutes or until the broccoli is tender. Keep an eye on them as microwave cooking times may vary.
    4. Stir the broccoli several times and then drain any excess liquid.
    5. Add the dried oregano, pepper, lemon juice, and tomato wedges to the broccoli.
    6. Sprinkle the shredded part-skim mozzarella cheese on top of the mixture.
    7. Cover the dish and microwave briefly to melt the cheese.
    8. Let the dish stand for 2 minutes before serving.
