2 sticks room temperature butter
1 cup sugar
1 large egg yolk (white reserved)
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 12 cups raw walnuts, finely chopped

Instructions

  • For Jan Hagel Cookies

    1. Preheat the oven to 325°F (165°C).
    2. In a large bowl, cream together the room temperature butter and sugar.
    3. Add the egg yolk and mix well.
    4. Sift the measured flour and add it to the butter mixture. Mix until just incorporated, being careful not to overmix.
    5. Press all of the dough into an ungreased 11x17-inch (half sheet) pan, making sure to distribute it evenly by using your fingers and the heel of your hand.
    6. Mix the egg white with 2 tsp of water to create an egg wash. Lightly and evenly brush the egg wash over the dough, reserving some for later use.
    7. Evenly sprinkle the finely chopped walnuts over the dough and press them in slightly.
    8. Using a pizza cutter, cut 7 lengthwise strips. Then cut diagonally about the same width as the lengthwise strips to form diamonds. Use a knife to cut the edges that the pizza cutter doesn't reach. The end diamonds make a nice treat for the cook.
    9. Bake in the preheated oven for 30-40 minutes until the dough puffs up, then deflates and turns golden brown. If the edges are brown but the dough has not deflated, remove from the oven. The dough will deflate as it cools. In some cases, the dough may not puff up at all, but will still brown.
    10. Allow the cookies to cool for 10 minutes, then carefully re-cut them. Use a spatula to loosen the cookies from the pan and let them finish cooling.
    11. These Jan Hagel cookies store well for several days in a covered container at room temperature or in the refrigerator. They also freeze beautifully.
