A traditional and aromatic Bengali sweet rice dish with hints of orange, coconut milk, and a blend of warm spices.

Ingredients

1 cup ghee
1 cup Basmati Rice
12 cup brown sugar
2 tablespoons dark raisins or dried cranberries
2 tablespoons chopped nuts such as almonds and cashews
12 teaspoon saffron strands
12 cup coconut milk
1 black cardamom
3 green cardamoms
13 cup bay leaf
1 few pieces cinnamon (1 large stick broken)
zest and segments of two oranges

Instructions

    1. Begin by heating a heavy-bottomed pot with a tight-fitting lid on the stove over medium heat. Add the ghee and allow it to melt. Lightly stir in the Basmati rice to coat evenly.
    2. Introduce the vibrant flavors of orange zest and segments to the pot, followed by the brown sugar. Stir the mixture thoroughly.
    3. Combine the fragrant cinnamon, black cardamom, green cardamom, bay leaf, saffron strands, and coconut milk. Pour in 1 and 1/2 cups of water, bringing the mixture to a gentle simmer.
    4. Cover the pot, reduce the heat, and let it cook for 20 minutes. Once done, turn off the heat and allow the rice to rest for 10 minutes. Remove the lid, fluff the rice, and embellish with chopped nuts.
    5. Serve this delightful dish either warm or chilled to enjoy the harmonious blend of flavors.
