Delicious and tangy lemon bars made with a combination of fresh lemon juice and lemon zest, baked to perfection in a pie plate. Sprinkle with confectioners' sugar and serve with whipped cream and fresh strawberries for an extra touch of elegance.

cup butter
¼ cup confectioners' sugar
1 cup all-purpose flour
3 eggs
1 cup white sugar
1 tablespoon grated lemon zest
¼ cup lemon juice
3 tablespoons all-purpose flour
2 tablespoons confectioners' sugar for dusting

Instructions

    1. Preheat the oven to 350 degrees F (175 degrees C).
    2. In a food processor, blend together ⅜ cup of butter, ¼ cup of confectioners' sugar, and 1 cup of all-purpose flour for about 10 seconds until the mixture resembles coarse crumbs. Press the dough evenly into a 9-inch round pie plate.
    3. Bake for 12 to 15 minutes or until the crust turns golden brown.
    4. In a mixing bowl, whisk together 3 eggs, 1 cup of white sugar, 1 tablespoon of grated lemon zest, ¼ cup of lemon juice, and 3 tablespoons of all-purpose flour until smooth. Pour the filling over the hot crust.
    5. Bake for an additional 15 to 20 minutes or until the filling is set. Allow the lemon bars to cool completely in the baking dish. Dust with 2 tablespoons of confectioners' sugar and cut into 12 triangle-shaped pieces.
