   Delicious and tangy lemon bars made with a combination of fresh lemon juice and lemon zest, baked to perfection in a pie plate. Sprinkle with confectioners' sugar and serve with whipped cream and fresh strawberries for an extra touch of elegance.

| 1. | Preheat the oven to 350 degrees F (175 degrees C). |

| 2. | In a food processor, blend together ⅜ cup of butter, ¼ cup of confectioners' sugar, and 1 cup of all-purpose flour for about 10 seconds until the mixture resembles coarse crumbs. Press the dough evenly into a 9-inch round pie plate. | 
| 3. | Bake for 12 to 15 minutes or until the crust turns golden brown. | 
| 4. | In a mixing bowl, whisk together 3 eggs, 1 cup of white sugar, 1 tablespoon of grated lemon zest, ¼ cup of lemon juice, and 3 tablespoons of all-purpose flour until smooth. Pour the filling over the hot crust. | 
| 5. | Bake for an additional 15 to 20 minutes or until the filling is set. Allow the lemon bars to cool completely in the baking dish. Dust with 2 tablespoons of confectioners' sugar and cut into 12 triangle-shaped pieces. |
