Maple Almond Sorbet

1⁄4 | teaspoon kosher salt |
0.67 | cup maple syrup |
1 | toasted almonds, coarsely chopped |
1⁄4 | teaspoon almond extract (optional) |
Instructions
1. | In a saucepan, bring rolled oats, 1 cup of water, and kosher salt to a boil. Simmer for 10 minutes, then remove from heat and allow to cool. |

2. | In another saucepan, combine maple syrup and toasted almonds. Cook until the mixture just begins to simmer. Remove from heat, strain the almonds from the syrup, and set both aside. |
3. | Using a food processor or blender, blend the cooked oats with 2 cups of fresh water until smooth. Strain the mixture through a fine sieve to obtain oat milk, which may have a texture similar to thin glue. Reserve the strained ground oats for other uses like bread or hot cereal. |
4. | In a clean saucepan, heat the oat milk and maple syrup, whisking constantly. Once heated, remove from heat. |
5. | Stir in the reserved almonds and almond extract (if using) into the oat milk mixture. Allow the mixture to cool, then freeze according to the instructions of your ice cream maker. |
