1 cup buttermilk
12 cup maple syrup
1 large egg
1 teaspoon granulated garlic
4 skin-on, bone-in chicken thighs
12 cup all-purpose flour
14 cup tapioca flour
1 tablespoon salt
1 teaspoon sweet paprika
12 teaspoon smoked paprika
1 teaspoon granulated onion
14 teaspoon ground black pepper
14 teaspoon cayenne pepper
12 teaspoon granulated garlic
12 teaspoon honey powder (such as Savory Spice)

Instructions

    1. In a large resealable plastic bag, combine buttermilk, maple syrup, egg, and granulated garlic. Add the chicken thighs, seal the bag securely, and marinate in the refrigerator for at least 1 hour or preferably overnight.
    2. Prepare the dry mix by combining all-purpose flour, tapioca flour, salt, sweet paprika, smoked paprika, granulated onion, black pepper, cayenne pepper, granulated garlic, and honey powder in a shallow bowl.
    3. Preheat the air fryer to 380 degrees F (190 degrees C).
    4. Remove the chicken thighs from the marinade, discarding the excess liquid. Dredge the chicken in the dry mix, shaking off any excess, then place the chicken skin-side down in the air fryer basket.
    5. Cook the chicken in the preheated air fryer for 12 minutes. Flip the thighs and continue cooking until an instant-read thermometer inserted into the center registers at least 165 degrees F (74 degrees C), approximately 13 minutes more.
