Ingredients

4 small beets, peeled (if using medium beets, quarter or slice)
1 tablespoon maple syrup, enough to coat the beets
12 teaspoon salt
1 slice bacon, cut into lardons
18 Granny Smith apple, peeled and brunoise diced
1 thin slice orange, peeled and brunoise diced
1 12 tablespoons butter
2 tablespoons maple syrup
1 teaspoon apple cider vinegar (a splash)
1 teaspoon orange juice (a splash)

Instructions

1. Preheat the oven to 400F. For the beets, peel them or leave the skin on for roasting. If using larger beets, quarter or slice them for quicker cooking. Place the beets in foil packets and drizzle with maple syrup, orange juice, and a touch of salt. Toss to coat, seal the packets, and roast for approximately one hour until tender. Set aside.
2. In a pan, fry the bacon lardons over medium heat until crispy. Drain on paper towels and set aside.
3. Discard excess bacon grease from the pan. Add half a tablespoon of butter and sauté the apple over medium heat until just tender, approximately 3 minutes. In the last 30 seconds, add the finely diced orange. Remove from heat and set aside.
4. Open the foil packets, remove the beets, and slice them. In a sauté pan, melt the remaining butter over medium-low heat. Add maple syrup, apple cider vinegar, and orange juice. Stir well and incorporate the beets along with the reserved liquid. Simmer gently until the liquid thickens to a syrupy consistency, about 10-15 minutes. Season with salt, if desired.
5. To serve, arrange the beets on a plate and drizzle the syrup over them. Top with the apple-orange salsa and a sprinkle of bacon lardons.
