1 package Double 8 Cattle Company Fullblood Wagyu Beef Bacon
3 Bay Leaves
1 teaspoon Black Peppercorns
½ cup Maple Syrup
½ cup Light Brown Sugar
½ teaspoon Dijon Mustard
Optional: Red Pepper Flakes

Instructions

    1. Prepare the following tools: Wooden Skewers, Parchment Paper, Aluminum Foil, Baking Trays with Racks, Pastry Brush
    2. First Step: Begin by thawing the Fullblood Wagyu beef bacon in the refrigerator 24 hours before starting the recipe.
    3. Preparing the Fullblood Wagyu Beef Bacon: Start by preheating the oven to 225°F. Wrap the Fullblood Wagyu beef bacon along with bay leaves and black peppercorns in parchment paper and then aluminum foil, ensuring a tight seal. Place the packet on a rack in a baking pan and bake at 225°F for 6 hours. Allow the bacon to cool, then transfer it to a dish. Place the bacon chunks on a rack to drip the fat off. Optionally, strain out the peppercorns and bay leaves from the rendered bacon fat and reserve for future use.
    4. Preparing the Glaze: While the bacon drains, combine maple syrup, brown sugar, mustard, and optionally red pepper flakes in a bowl to create the maple syrup glaze.
