Maple Sea Salt Honeycomb Candy
A sweet and crunchy treat with the perfect balance of maple and sea salt flavors.
Ingredients

1 | tablespoon baking soda |
1 ½ | teaspoons flaky sea salt |
Instructions
1. | Prepare a rimmed baking sheet by lining it with a Silpat mat or greased parchment paper. |

2. | In a medium, heavy saucepan, combine 1 ¼ cups of sugar, ½ cup of maple syrup, and 1/4 cup of cold water. Heat the mixture over medium-high heat, stirring just until the sugar dissolves. Once dissolved, refrain from stirring and instead swirl the pot occasionally. Allow the mixture to boil until a candy thermometer reads nearly 300°F and it reaches a dark amber color; this typically takes 5 to 7 minutes. |
3. | Remove the saucepan from the heat promptly and whisk in 1 tablespoon of baking soda until well combined. Pour the mixture immediately onto the prepared baking sheet using a heatproof spatula to transfer it from the pot. Avoid smoothing the mixture as it will eliminate the desired air bubbles. |
4. | Sprinkle the surface of the candy quickly with 1 ½ teaspoons of flaky sea salt. Place the baking sheet in a cool, dry location to allow the candy to cool and harden. Once set, break the candy into irregular chunks using your fingers. For added richness, consider dipping the candy pieces in melted semisweet chocolate and cooling them again. |
