Ingredients

1 lb ground chuck
4 large thick pita breads
4 cloves garlic, minced
1 cup unsalted butter, softened
2 tablespoons olive oil
12 lb mushrooms, sliced
1 small red onion, sliced
salt
freshly ground black pepper
12 cup crumbled feta cheese
lettuce leaf (for garnish)
4 slices tomatoes (for garnish)

Instructions

  • For the Burgers

    1. Divide the ground chuck into four portions and shape them into half-moon-shaped patties, sized to fit on half a pita bread.
    2. In a small bowl, use a fork to mash the minced garlic with softened butter; set it aside.
    3. Heat the olive oil in a skillet over medium-high heat.
    4. Add the sliced mushrooms, onion, salt, and freshly ground black pepper; cook until tender, approximately 5 minutes.
    5. Keep the mushroom mixture warm.
    6. Prepare a charcoal or gas grill for cooking.
    7. Spray the grill rack with non-stick cooking spray.
    8. Cook the burger patties to the desired doneness. (For medium-rare, cook about 4 minutes on one side, then turn and cook for an additional 4 minutes.)
    9. During the last few minutes of cooking, brush one side of each pita bread with the garlic butter and place them, buttered side down, on the outer edges of the grill to lightly toast.
    10. Place a toasted pita bread, buttered side up, on a serving plate.
    11. Position a burger patty on one half of the pita bread.
    12. Top the patty with 1 tablespoon of crumbled feta cheese.
    13. Spoon a portion of the warm mushroom mixture onto the other half of the pita bread.
    14. Repeat the process to assemble all 4 sandwiches.
