Delicious and flavorful individual-sized meatloaf muffins, perfect for a quick and easy meal.

Ingredients

2 lean ground beef
1 (10.5 ounce) can condensed vegetable soup
1/2 cup chopped onion
1 cup dry bread crumbs
2 eggs
1 teaspoon salt
1 pinch ground black pepper
3/4 cup ketchup (Optional)

Instructions

    1. Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 12-cup muffin pan.
    2. In a bowl, combine 2 pounds of lean ground beef, a 10.5-ounce can of condensed vegetable soup, chopped onion, dry bread crumbs, eggs, salt, and a pinch of ground black pepper. Mix well.
    3. Evenly scoop the meatloaf mixture into the prepared muffin cups.
    4. Bake in the preheated oven for 1 hour or until the internal temperature reaches a minimum of 160 degrees F (70 degrees C).
    5. If desired, after 50 minutes of baking, remove the muffins from the oven, drizzle ketchup on the top of each muffin, and return to the oven for an additional 10 minutes.
