Mini Meatloaf Muffins
Delicious and flavorful individual-sized meatloaf muffins, perfect for a quick and easy meal.
Ingredients
2 | lean ground beef |

1 | (10.5 ounce) can condensed vegetable soup |
1/2 | cup chopped onion |
1 | cup dry bread crumbs |
2 | eggs |
1 | teaspoon salt |
1 | pinch ground black pepper |
3/4 | cup ketchup (Optional) |
Instructions
1. | Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 12-cup muffin pan. |

2. | In a bowl, combine 2 pounds of lean ground beef, a 10.5-ounce can of condensed vegetable soup, chopped onion, dry bread crumbs, eggs, salt, and a pinch of ground black pepper. Mix well. |
3. | Evenly scoop the meatloaf mixture into the prepared muffin cups. |
4. | Bake in the preheated oven for 1 hour or until the internal temperature reaches a minimum of 160 degrees F (70 degrees C). |
5. | If desired, after 50 minutes of baking, remove the muffins from the oven, drizzle ketchup on the top of each muffin, and return to the oven for an additional 10 minutes. |
