Mustard-Glazed Ham with Brown Sugar Bourbon Glaze

Instructions
1. | Prepare the Ham: Preheat the oven to 300°F. Score the ham in a diamond pattern about ¼ inch deep, if it's not pre-sliced. Place the ham on a rack in a large roasting pan. |

4. | Spritz with Bourbon: Lightly mist the brown sugar with bourbon using a spray bottle, moistening it slightly. Use just enough to coat the sugar. |
5. | Bake the Ham: Roast the ham, uncovered, basting occasionally, for 20 minutes per pound until golden and caramelized. |
6. | Prepare the Glaze: Strain the ham drippings, skim the fat as desired, and add ham stock to make 1½ cups. In a saucepan, bring the mixture to a boil. Stir in brown sugar, dry mustard, nutmeg, and cloves. Cook until thickened. For extra flavor, consider incorporating a splash of pineapple juice. Serve the glaze alongside the ham. |
