This refrigerator strawberry shortcake keeps the potluck shortcut of Twinkies in place of baked shortcakes, but moves closer to the classic dessert with sugared fresh berries and real whipped cream. A short chill lets the cakes soften into the strawberry juices while the cream cheese keeps the cream layer sliceable.

Instructions

1. Toss the strawberries, granulated sugar, lemon juice, and salt in a large bowl until evenly coated.
2. Let the strawberries stand at room temperature for 20 minutes, stirring once, until glossy and juicy.
3. Beat the cream cheese, confectioners' sugar, and vanilla in a large bowl until smooth.
4. Whip the cold heavy cream in a separate bowl to medium peaks.
5. Fold one third of the whipped cream into the cream cheese mixture to lighten it.
6. Fold in the remaining whipped cream just until no streaks remain.
7. Arrange half of the split sponge cakes, cut side up, in a 13 x 9-inch dish.
8. Spoon half of the strawberries and their juices evenly over the cake layer.
9. Spread half of the cream mixture over the strawberries.
10. Repeat with the remaining sponge cakes, strawberries, and cream mixture.
11. Cover and refrigerate for at least 4 hours, or up to overnight, until the cake layer is tender and the dessert slices cleanly.
12. Serve chilled, cutting into 16 squares.
