1 pound dry great Northern beans
1/2 pound cooked ham, diced
1 small onion, diced
1/2 cup brown sugar
1 tablespoon dried parsley

6 water, or as needed to cover

Instructions

    1. Begin by preparing the beans. Rinse the dry great Northern beans and transfer them to a large stockpot. Cover the beans with cold water and allow them to soak overnight or for a minimum of 8 hours. After soaking, drain and rinse the beans thoroughly.
    2. In the same stockpot, return the soaked beans and add the cooked diced ham, finely diced onion, brown sugar, dried parsley, and a pinch of cayenne pepper. Pour in enough water to completely cover the ingredients and season generously with salt and pepper. Bring the mixture to a gentle boil, then reduce the heat to low and allow it to simmer until the beans are tender, which typically takes about 1 1/2 to 2 hours. If necessary, add more water during cooking to ensure the beans remain covered.
